Breakfast: I had some roasted potatoes and veggies I had made leftover, so I tossed some eggs over easy on top, added avocado and called it good!
Lunch was a busy time with early dismissal today, so I had turkey roll ups with the last of the veggies leftover from my Symbowl. Delicious.
For dinner, we made ribs in the Instapot. Let me tell you something...they were amazing! The meat fell right off the bone. I know we will do it again, with a slightly different recipe as this one lacked a ton of flavor. But man, they were so good I didn't even take a picture! I made"fries" out of the cut up butternut squash I had from Trader Joe's, with just some coconut oil, salt and pepper. Jamie and Parker loved them!
